Chiyonokame (CHIYONOKAME-SHUZO INC.)

CHIYONOKAME SHUZO is located in Uchiko, Ehime, was founded in 1716. Uchiko is a charming historic town and easily accessible via a 25-min train ride from Matsuyama. Matsuyama is the capital city of Ehime Prefecture on Japan’s Shikoku Island.

From the Edo period (1603-1867) to the Meiji period (1868-1912) the Yokaichi & Gokoku Historic District Preservation Zone prospered as a manufacturing centre of vegetable wax. From the district’s acquired fortune came the construction of many solid, elegant houses. The ground breaking preservation movement of the historic district in Uchiko began in 1972. In 1982, Uchiko became the first town in Shikoku to have one of Japan’s designated Important Preservation Districts for Groups of Traditional Buildings.

Although they have 300 years history, they do not get stuck in the past, keep trying new challenge. Recently Chiyonokame has begun to cultivate sake rice with contracted local farmer and try not to use excessive pesticide. In order to deepen understanding of rice, they also participates from rice planting. To make delicious sake, strict hygiene management and precise temperature control are essential. They store sake under the air-conditioning system in modern clean storage.

Rifu is a robust, dry sake with a mellow aroma reminiscent of fresh pear. Rifu was served at the 2008 Cannes International Film Festival reception party and received high praise from guests.

Kawanakajima Gembu (SHUSEN KURANO INC.)

Sake Brewery, SHUSEN KURANO was founded in Kawanakajima, Nagano, in 1540. Kawanakajima is blessed with beautiful nature and clear spring water. Shusen-kurano is one of the oldest Sake breweries in Japan with a long history of more than 460 years. One of the major wars, the Battle of Kawanakajima, was fought in here during the civil war period, the Sengoku of Japan in the 16th century. Most likely, famous samurai generals such as TAKEDA Shingen and UESUGI Kenshin tasted their sake.

The Sengoku was a century-long period of political upheaval and warlordism in Japan, lasting from the Onin War of 1467–77 through the reunification of the country around 1598. It was a lawless era of civil war, in which the feudal lords of Japan fought one another in endless plays for land and power. Although the political entities that were fighting were actually just domains, the Sengoku is sometimes referred to as Japan’s “Warring States” Period.

Kenshin is sometimes referred to as “The Dragon of Echigo” because of his fearsome skills in the martial arts displayed on the battlefield. His rival Takeda Shingen was called “The Tiger of Kai”.

Takeda Shingen was an ideas man, an exceptional general famous for his tactical genius, and his innovations. He was an asset to his father from an early age, playing a major role in the Battle of Un no Kuchi in 1536, at the age of just 15. When his father, for some unknown reason, announced his second son as heir, Shingen led a bloodless coup, sending his father into custodial retirement. As undisputed leader of the Takeda clan, he commenced his expansionist policies, seeing action in the Battle of Sezawa, the sieges of Uehara, Kuwabara and Fukuyo, Battles of Ankokuji, Odaihara, Shiojiritoge etcetera, and the famed series of Battles of Kawanakajima against Uesugi Kenshin.

Kenshin was one of the most powerful daimyos of the Sengoku period. While chiefly remembered for his prowess on the battlefield, Kenshin is also regarded as an extremely skillful administrator who fostered the growth of local industries and trade; his rule saw a marked rise in the standard of living of Echigo. He was also known as a heavy drinker.

Kenshin’s death poem was: 四十九年一睡夢 一期栄華一盃酒

Even a life-long prosperity is but one cup of sake; A life of forty-nine years is passed in a dream; I know not what life is, nor death. Year in year out-all but a dream. Both Heaven and Hell are left behind; I stand in the moonlit dawn, Free from clouds of attachment.

The Battle of Kawanakajima became one of the most cherished tales in Japanese military history, the epitome of Japanese chivalry and romance, mentioned in epic literature, woodblock printing and movies.

Once the location of the headquarters of the army of Shingen Takeda during the Battle of Kawanakajima, Hachimanpara today is opened to the public as a historic park filled with greenery. 12,000 ㎡ of artificially made hills covered with grass, the murmur of the brook with arranged natural rocks, and an arbor with a classical thatched roof are some of the qualities that bring relaxation to the locals. Adjoining to the City Museum, the old battlefield of Kawanakajima and Hachimansha, it is the best spot to enjoy the historic walk.

Tatenokawa (TATENOKAWA, Inc.)

In 1832, when the head of the Uesugi clan first visited the Shonai area he was so amazed by the quality of the water that he recommended sake production to first generation Heishiro.

And so, in 1854, Heishiro began making sake. In the following year 1855, the visiting Daimyo of the Sounai Clan, Sakai Tadakatsu was presented with the sake and in return christened the brand “TATENOKAWA” (English Name: CASTLE BROOK).

In 2005 they began establishing contracts directly with local farmers. The raw ingredients of Junmai Daiginjo are rice and water. The rice plays a huge part in determining the quality of the end product and yet so many breweries rely on rice suppliers and brewer’s associations for procurement.

In 2010, here at TATENOKAWA, Inc. they began Junmai Daiginjo only production under a new “TATENOKAWA” 100 year vision

In order to realise this vision they have increased the tempo of their overseas exports, which they began in 2008, with a view to their sake becoming a luxury item that has fans all over the world.

Their goal is to make sake that appeals to and is recognised by people globally.

楯野川 純米大吟醸 上流 Tatenokawa Junmai Daiginjo More detail JOURYU 720ml (専用カートン付)

A part of the Ryu (stream) series, is named after its high quality and high specifications. Made with 40% polished Yamada Nishiki sake rice and only the best part of the sake pressing nakadori (middle cut). A sake with a stable balance of flavour and aroma, a nose of ripened fruits, and a high quality Japanese candy like elegance, topped off with a clean finish.

 

 

Yukinobosha (Saiya Shuzouten Co.,Ltd.)

Saiya Shuzo is located in Yurihonjo City, Akita prefecture, founded in 1902. It is multiple awarded brewery and top class sake in Akita.

Yurihonjo City is in the southwest of Akita Prefecture. It has a graceful mountain, Mt. Chokai, in the south, and, the western part of the city is on the Japan Sea. It is a city spreading out along Koyoshigawa, a class A river with headwaters coming out of Mt. Chokai. It is filtered down through the mountain. This is semi-soft water, which is very good for sake brewing.

Saiya Shuzo doesn’t allow high demand to speed up their production. The brewery has always put a strong focus on using their own in-house yeast and milling rice properly. Saiya Shuzo was the first brewery in Akita prefecture to culture its own yeast. By isolating and re-culturing the healthy and hardworking yeast out of moromi (fermenting mash) tanks, the master brewer has discovered a strain of yeast that can survive under a strenuous environment of low temperature and higher alcohol content as the fermentation progresses in the tank. The master brewer, Touichi Takahashi is keep researching sake yeast and touching sake koji, therefore his hands are still soft youthful skin.

Koshinohakuro (HAKURO SHUZO co.Ltd.)

Since its foundation in 1751, HAKURO SHUZO has been playing a part of sake culture surviving rapid changes in history in Echigo-Nagaoka, present Nagaoka city, Niigata prefecture. In 1882, given over a brewery owned by the lord of Nagaoka clan, the MAKINO family, it started to use the family’s crest, “Mitsu-Kashiwa” and succeeded a brand name “HAKURO”. As time goes by, people engaged in sake production have changed, but our posture to “produce delicious sake to please many people” has been maintained till now.

Beyond the peaks of the Iides, the Mikuni mountains, and the peaks of the Tateyamas, our rich field spreads. The snow melts to flow on this rice producing area in spring and summer, wets Echigo Plain and brings about a rich harvest in autumn.

HAKURO SHUZO now has introduced modern methods of sake production. While maintaining the merits of traditional Japanese sake, for further improvement, they always strive to research on new technology to apply to the change of times and to develop new products as well as to maintain the quality control. A good combination of matured techniques of the local Echigo-Toji and young craftsmen’s energy in addition to the modern facilities, produces high quality hand-made “HAKURO”.

Niigata Prefecture has over 90 sake breweries. With 17 of those in Nagaoka, the city has the most breweries in the prefecture and second most in Japan.

Inside JR Nagaoka station, Ponshukan is a sake “theme park” where you can sample leading local sake brands, purchase sake-related goods. In the sake tasting corner, for only ¥500, you get five coins, each of which gives you a full shot of rice wine. Simply insert the coin into the small sake vending machines, press the “start button,” and watch the wine flow. Ponshukan offers over 100 different brands of sake produced by renowned breweries all over Niigata. Don’t miss it!

You can taste Hanzo, Ota Sake Brewery from Mie prefecture, and Yoshinogawa, Yoshinogawa co,Ltd from Niigata prefecture.

Hanzo (Ota Sake Brewery)

Currentry, there are 34 sake brewaries in Mie. The sake produced in Mie’s breweries always performs well in the Annual Japan Sake Awards and other contests, and its delicious taste is gaining increasing attention. The reasons why it tastes so delicious are Mie’s rich food culture rooted in the locality, its climate, clear spring water, and high-quality sake rice. Based on these factors, the breweries produce a variety of high-quality sake that complements well with all kinds of cuisine.

The products of Ota Sake Brewery Co., Ltd. are largely hand-made according to traditional production techniques. The brew master, or “Toji”, is the most important person in the brewing process. He controls the quality of the sake by deciding at what temperature the fermentation process takes place. He also supervises all the other workers. The most important period in the sake making process is from November to April, since the low winter temperatures benefit the sake quality.

During this time, the brew master is always present in the brewery, continuously checking the temperature of the raw sake, even during the night. Many experienced brew masters are originally from the Tohoku area of Northern Honshu.

The brew master at Ota Sake Brewery Co., Ltd., Mr. Hisamitsu Fujii, 71, comes from Iwate Prefecture, also located in Tohoku, and is a member of the “Nambu Toji” Brew Master Guild. His skills, combined with 50 years of sake making know-how at Ota Sake Brewery Co., Ltd., where management and staff is working together as a team with the determination to only produce the highest quality.

Hanzo Junmai Daiginjo was selected for G7 Ise-Shima Summit. Because of that Hanzo Junmai Daiginjo Yamadanishiki Migaki 40 (Seimaibuai 40%) was short supply.

Hanzo Junmai Daiginjo 【Kami No Ho】大田酒造 半蔵 純米大吟醸 神の穂 720ml

Exclusively made with the “Kami No Ho” variety of sake rice, especially developed over 12 years for the Mie area, which was described as “God’s country” in Japanese legends. It features a fresh, particularly smooth flavor, the way sake should taste.

Yoshinogawa (Yoshinogawa co,Ltd)

Yoshinogawa is located in Settaya, Nagaoka city, Niigata. Nagaoka is famous for Fireworks. The Nagaoka Festival is held from August 1st to August 3rd around the Shinano River. Its main attractions are the portable shrine float parades and folk dance processions during the day with large-scale fireworks displays in the evening on the final two days. It is one of the three great fireworks festivals of Japan.

It is said that over 1 million spectators attend over the three days every summer. It is really a big event, you need an early reservation for transport and accommodation.

Settaya is a village in Niigata known for many years as a place specializing in fermentation. There are swarms of breweries such as Sake, Mirin (sweet sake; used as seasoning) and Soy sauce in the 500 square meters and you can see many wooden and old style buildings. On of the old building has existed ever since the Edo period. This quaint town still retains the atmosphere of old bygone days.

Mikuni Kaido (三国街道) was an ancient highway in Japan that stretched from Takasaki-juku (present day Gunma Prefecture) on the Nakasendo to Teradomari-juku (present day Niigata Prefecture) on the Hokuriku Kaido. Settaya area was along the Mikuni Kaido and convenient location in Edo period. Moreover, there were abundance of high quality underground water from Ota river and Shinano river also produced rice and soybeans. Therefore sake, miso and soy sauce brewing industries developed in this area.

Yoshinogawa is founded in 1548. It is the oldest brewery in Niigata where the one of Japan’s leading sake producing areas. They have 470 years brewing history.
