You can taste Taikan, Taikan Shuzo Co., Ltd, from Yamanashi prefecture, and Tsukasabotan, Tsukasabotan Brewing from Kochi prefecture.

Taikan (Taikan Shuzo Co., Ltd,)

Founded in 1887. The name “Taikan” is derived from “crown” (pronounced “kan” in Japanese) which was worn by a newly promoted military officer in the hopes of achieving success in his career. Connoting success and promotion, the sake named “Taikan” has been known as a celebratory drink that fulfills one’s dreams.

The brewery pays close attention to ingredients, especially organically grown rice, mainly using top-grade Yamadanishiki rice produced in Hyogo Prefecture as well as rice grown in Yamanashi Prefecture. Using mother water mainly from the mountains of the southern Alps, sake is brewed with a dedicate exactness by hand.

With such a commitment to perfection, the brewery has won the gold prize 5 times and the silver prize 9 times at the Annual Japan Sake Awards, and has been accumulating prizes at the Tokyo Regional Sake Awards held by the Tokyo Regional Taxation Bureau for 30 years.

Tsukasabotan (Tsukasabotan Brewing)

Established in 1603. Tuskasabotan is one of a symbolic sake brands in Kochi. Sakamoto Ryoma is one of Japan’s favorite historical figures and was a central mover in efforts to overthrow the shogunate 150 years ago. It is said that he also enjoyed “Tsukasabotan”. Their sake is brewed with NIYODO River which is the miraculous clear stream Niyodo River boasts the highest water quality in all of Japan. The soft river water makes their sake taste good length even though Kochi sake is typically light and dry.

You can taste Tsukasabotan with traditional Japanese cuisine at Hotel Gajoen Tokyo 21st of September. ¥15,000

Shiga Jizake Festival 2018 After party @Nihonbashi

Born in Tokyo’s Nihonbashi district, CocoShiga is a base for disseminating information about Shiga Prefecture, home of the famous Omi merchants and a place where even today people, goods and information gather and connect from all over the world.

It a place where you can experience Shiga through the five senses and which offers special events for conveying Shiga’s charm from different angles, the sale of special products and traditional crafts, a local sake bar where you can taste the local sakes of different breweries, a restaurant which uses a wealth of Shiga’s ingredients to serve traditional “Omi beef and fermented products,” and much more.
